What is the use of this tool?

This tool cuts/docks/slashes/scores bread, baguettes, and sourdough loaves prior to placing bread in the oven, to help the dough rise and to control its expansion during baking to give it a professional look.

A score on the surface of your pre-baked loaf allows the dough to expand in the oven without tearing the skin or crust and also lets moisture escape; correct scoring lets the baker control where the loaf will open or bloom; that precision of the score will ensure a pleasing appearance of the baked bread and allow seasoned bakers to give the bread their own unique ("signature") look

The cut will also achieve the release of gas trapped inside the dough.

How To Score Your Bread?

Score your loaf with this blade after you've finished proofing the dough and are ready to put it in the oven; hold the lame with a firm grip and with a quick motion slice into the loaf.
