Steps for Making Tofu:.
1. Soak soybeans (8-12 hours in cold weather, 4-8 hours in hot weather).
2. Grind soybean milk, filter, and cook (boil over high heat and then simmer for 5-8 minutes).
3. After cooking, cool to about 80 ℃, stir the soybean milk while slowly pouring in the brine(brine, vinegar, gypsum are all OK), mix thoroughly and let stand.
4. When the soybean milk clumps and appears like bean curd, pour it into a mold with cotton yarn filter cloth(not include) and compact it into shape.
