1. Inspect the jar for damage. Before use, please ensure that the glass jar is free from any damage or defects. Do not use the jar if it is damaged. 2. Clean the jar and the airlock lid. We recommend cleaning the jar and the airlock lid with warm water and a mild detergent. Rinse thoroughly and do not use water hotter than 70°C. 3. Prepare the ingredients. Add the ingredients you wish to ferment into the jar, along with water and any desired seasonings. Do not fill the jar too full, to leave adequate space for fermentation. 4. Tighten the airlock lid. Rotate the valve plunger of the manual venting valve to the current date to record the start date of fermentation. Before fermentation, press the valve plunger of the manual venting valve to make sure it is closed. During fermentation, released gas will automatically escape from the automatic venting valve. If needed, you can also pull the valve plunger of the manual venting valve to release gas manually, then immediately close it. 5. Store in an appropriate temperature. Depending on the ingredients you are fermenting, choose a suitable temperature for fermentation. Do not expose the jar to sunlight or high temperatures during fermentation. 6. Wait for fermentation to complete. The length of fermentation time varies depending on the ingredients and temperature, usually taking several days or weeks. Observe any bubbles and changes in the ingredients during fermentation to monitor its progress. Do not open the lid during fermentation unless necessary. 7. Open the airlock lid. After fermentation is complete, loosen the airlock lid gradually to avoid sudden release of pressure that may cause spillage. Note that gas produced during fermentation may make it difficult to open the airlock lid. In this case, pull the valve plunger of the manual venting valve to balance the pressure inside the jar.
